Don't Orthodox Christians follow man-made traditions instead of the Bible?

He rejects the framing that some churches rely on tradition while Bible-only churches do not. St Paul calls the church the pillar and ground of truth and tells Timothy to hold to what was handed down, and Protestantism has just as many traditions of its own — altar calls, Sunday school, worship bands — none of them in the New Testament. He adds the historical point that a complete New Testament did not exist until roughly the 330s and was itself decided by a church council; before that, Christians relied on preaching and the eucharistic worship attested in early liturgical texts.
